
I highly recommend using a kitchen scale instead of using conversions. They are not very expensive and you will find that you will use it a lot more than you may think!
INGREDIENTS
100 g spelt flour
100 g mixed nuts (I use pecans, walnuts, and almonds)
50 g mixed seeds (I use sunflower, poppy, sesame and pumpkin)
50 g olive oil
50 g honey (use local - or Manuka *see below)
2 eggs
DIRECTIONS
dump everything in a bowl and mix (my kind of a recipe!)
dump mix into a greased loaf pan
bake at 375 for 20-30 min The original recipe is for biscotti (so then you'd wait for it to cool, slice it again and bake for another 5 minutes on each side) but we eat it as bread and its delicious!
